Keto Chocolate Chip Cookies

Yield:  Makes 12 cookies

 

I don't know about you, but when I was a kid, my absolute favorite kind of cookie was of the chewy chocolate chip variety. There was something so comforting and luxurious about them. As I grew up, opened up my horizons a bit to cookies of all shapes and sizes. In my travels, I experienced the mouth watering deliciousness of chocolate chip cookies kissed with sea salt (thanks to Chelsea's Kitchen, my favorite restaurant of all time), and decided to bring together these two elements to make the ultimate keto chocolate chip cookie.

 

Ingredients

2 large eggs

⅓ cup plus 1 tbsp coconut flour

4-ounces stevia-sweetened dark chocolate chips

⅓ cup Swerve confectioners sugar substitute

1 ¼ teaspoon vanilla extract

¼ cup (2 oz) Kerrygold salted grass-fed butter

1 tablespoon unflavored grass-fed beef gelatin (if you're not into animal products, you can substitute with half the amount of xanthan gum)

½ teaspoon baking soda

Flake finishing salt - we like this one


 

Instructions

Step 1: Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat

Step 2: Whisk the eggs until frothy.

Step 3: Add the vanilla extract, Swerve, and melted butter and combine thoroughly.

Step 4: Add the beef gelatin, coconut flour and baking soda to the bowl, and mix all the ingredients together until you've got a uniform looking dough mixture.

Step 4: Fold the chocolate chips into the dough until they appear to be evenly distributed throughout the dough

Step 5: Using a cookie scoop to scoop the dough onto baking sheet

Step 6: Use your fingers to press down on the dough balls until they are a uniform thickness - around 1/3" to 1/2" thick. Bake for 8 to 10 minutes, until the edges are lightly browned.

Step 7: Remove the cookies from the oven. While they are still warm, sprinkle with finishing salt and refrain from taking them off the cookie sheet until they're completely cooled.  

Step 8: Enjoy! They'll last the better part of a week stored at room temp, but they freeze and heat up great!
