Easy Keto Recipe: Instant Pot Bone Broth

Bone broth is warm, satisfying and satiating. It's loaded with collagen, nutrients and minerals that will help with everything from gut health to giving you more youthful look hair, skin and nails. I've found it very helpful in helping me to stick to my intermittent fasting routing in the evenings.
We recently got an instant pot which makes the process of making bone broth so much easier and so much less time consuming. Check out the video to see the hilarity ensued as I tried to make my first batch of bone broth without reading the instructions.
There are lots of different ways to make bone broth, and you can make it out of any kind of bone. This time around, we chose to go with beef bones and we added a generous helping of aromatics which really infused a lot of flavor into the broth.

Ingredients:
- 2-3 lbs beef marrow bones
- 2-3 lbs oxtail
- 1 bulb garlic, peeled and lightly crushed
- 1 leek, chopped
- 5 qts water (depends on capacity of your pressure cooker/slow cooker)
- 2-3 large stalks celery, chopped
- 1 large carrot, chopped
- 2-3 tbsp kosher salt
- 2-3 tbsp whole peppercorns
Instructions:
Step 1: Add bones to a large stock pot and heat to a boil. Boil for 30 minutes. While the bones are boiling, preheat your oven for 400°F (205°C).
Step 2: Remove bones from stock pot and place on a baking sheet. Roast the bones at 400°F (205°C) for 30 minutes.
Step 3: Remove bones from the oven and place in your pressure cooker. Add garlic, carrots, celery, leeks, salt, pepper and water. Be careful not to exceed the maximum water capacity of your cooker!
Step 4: If using a pressure cooker, cook on high pressure for 3 hours. If using a slow cooker, set for 24 hours.
Step 5: Once the broth is done cooking, remove the large pieces of bone, meat and aromatics using a mesh strainer or sieve. Save that marrow and meat for a delicious post-cooking reward!
Step 6: Ladle the bone broth into mason jars and enjoy!
